I found out, that with the /log: parameter, robocopy works as intended
<install cmd='robocopy.exe %SOFTWARE%\pdfsam\ "%PROGRAMFILES%\PDFSAM" /mir /log:%temp%\robocopy.log' />
for %temp% you can use any other path you like
